  • 2 pounds boneless chicken breasts, cut in halves
  • 2 tablespoons lime juice

  • 6 tortillas

Directions

  1. Mix lime juice with dried chilies. Then, add your chicken into a slow-cooker before pouring the mixture over it. Keep your chicken covered and cook on low for six hours. 
  2. Remove chicken and leave to cool.
  3. Once at a suitable temperature, shred the meat using two forks. Add corn and salsa to the slow cooker and cook, on low, for 30 minutes.
  4. Place filling on warmed tortillas and serve. You can choose whether to add sour cream or lettuce, depending on your preference.  
  5. Pizza Tater Tot Casserole

You’ll Need

  • 2 pounds ground beef
  • 1 medium red pepper
  • 1 onion
  • 1 pound mushrooms
  • 1 can pizza sauce
  • 1 teaspoon basil
  • 2 cups mozzarella 
  • 1 package tater tots
  • 1 cup shredded cheese

Directions

  1. Cook the ground beef, red pepper, onion, and mushrooms in a large skillet. Turn to medium heat until the beef is no longer pink. Once done, crumble the meat and drain. Add pizza sauce and fresh basil. 
  2. Transfer to a baking dish and top with the mozzarella and tater tots. Bake at 400 degrees Fahrenheit for 30 minutes. 
  3. Sprinkle with cheddar cheese and bake until melted. Then serve.  
  4. Beef Stew

Directions

  2. Cover the stew and bake at 350 degrees Fahrenheit for one hour. Stir carrots, potatoes, and celery. Bake until meat and veggies are tender. Serve.
